  1. What is in the box

Strickle Set: the wooden roller with two diamond discs, a coarse disc and a fine disc, and the angle block with two sloped ends, 15° and 20°. The coarse disc feels rougher. The maker labels them 400 and 1000 grit.

Gift 2-pack: two Sets. They may come in two boxes on different days.

Extra disc, if you added one: a stone disc, used wet. It may come in its own box, on a different day.

  2. Pick the angle

Many German-style and American knives are near 20°. Many Japanese-style knives are near 15°. Makers differ, so if yours gives a number, use that. When in doubt, use the 20° end.

  3. Sharpen with the coarse disc

    1. Set the block on a flat, steady counter.
    2. Lean the flat of the blade against the block's sloped end, 15° or 20°.
    3. Roll the coarse disc along the edge, from the heel to the tip, with light, even pressure.
    4. Then do the other side of the blade the same way.
  4. Refine with the fine disc

Then use the fine disc the same way, on both sides of the edge.

To check, hold the edge up to the light. A dull spot shows as a bright glint along the edge. Roll that part again on the coarse disc, both sides, then refine with the fine disc.

  5. With an extra disc

An extra disc is stone, and you use it wet. Go from coarse to fine: the higher a disc's number, the later it comes. Polish and Final polish come last, after the fine disc.

    1. Wet the stone with water.
    2. Screw it on in place of one diamond disc.
    3. Roll both sides of the edge the same way, and wet the stone again when it dries.
    4. Rinse it and let it dry before you put it away.

If it does not fit your roller, write to us and we refund it.

  6. Look after it

Wipe the blade after sharpening: the roller's rubber rings can leave black marks. Wipe the discs with a damp cloth and let everything dry before you put it away. Keep the wood away from standing water.

  7. Stay safe

Hold the knife by its handle and keep your fingers away from the edge. It is for straight kitchen edges: not serrated knives, like bread knives, and not ceramic blades. Keep it away from children.
